Share that scratch baking love!

Are you ready to add a dash of spice to your dessert game? Look no further than the Mexican Chocolate Cake, an indulgent treat that promises to delight your palate with its unique flavors.

What Makes It Unique?

Mexican chocolate isn’t just any ordinary chocolate. It’s a flavorful blend of cacao beans mixed with cinnamon and sometimes even a hint of chili. This chocolate is traditionally ground into a paste, which can then be used to create a variety of dishes, including our star dessert.

The Charm of Cinnamon

The addition of cinnamon in Mexican chocolate gives it a warm, spicy flavor that sets it apart from other chocolates. When baked into a cake, the cinnamon works its magic by enhancing the chocolatey richness with its woody and sweet notes.

A Hint of Heat

For those who dare, a touch of chili can take this cake to new, exhilarating heights. The heat subtly kicks in after the initial sweetness, offering a sophisticated balance that keeps you coming back for more.

Moist and Irresistible Texture

The perfect Mexican Chocolate Cake is moist and airy with a tender crumb that melts in your mouth. Pair it with a creamy ganache or a dollop of whipped cream, and you’ve got yourself a truly decadent dessert.

Decorating Delight

When it comes to decorating your Mexican Chocolate Cake, let your creativity soar! A dusting of powdered sugar, a sprinkling of cocoa nibs, or even some edible flowers can turn your cake into a work of art worthy of any celebration.

Perfect for Any Occasion

Whether it’s a birthday bash, a family get-together, or just a quiet evening indulging in your baking passions, the Mexican Chocolate Cake is versatile enough for any event. It’s not just a cake; it’s an experience that brings people together, creating memories with every bite.

Ingredients

Cake:

  • 1 3/4 cups all-purpose flour 228 grams
  • 1 3/4 cups granulated sugar 350 grams
  • 3/4 cup unsweetened cocoa powder 75 grams
  • 1 teaspoon baking powder 4 grams
  • 2 teaspoons baking soda 10 grams
  • 2 teaspoons cinnamon 6 grams
  • ¼ teaspoon cayenne pepper optional, 1 gram
  • 1 teaspoon salt 8 grams
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla
  • 1 cup freshly brewed strong hot coffee

Frosting:

  • 1 cup salted butter room temperature
  • 1 ½ teaspoons vanilla extract
  • 4 cups powdered sugar
  • 5-6 tablespoons heavy cream
  • 1 tablespoon cinnamon

Topping:

  • 1 cup mini chocolate chips

Instructions

  • Preheat the oven to 350ºF. Spray a 9×13 baking pan with cooking spray.
  • In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, cinnamon, cayenne pepper (if using), and salt.
  • In a stand mixer, blend buttermilk, oil, eggs, and vanilla. Gradually mix in the dry ingredients on low speed. Add the coffee and mix until smooth; the batter will be thin.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean.
  • Let the cake cool on a cooling rack.

Make the frosting:

  • In a stand mixer, whip the butter for 2 minutes until fluffy and lightened in color.
  • Mix in vanilla and cinnamon. Gradually add powdered sugar, alternating with heavy cream, ending with powdered sugar. Whip on high for 2 minutes, adjusting with more cream if too thick.
  • Spread the frosting over the cooled cake and sprinkle with mini chocolate chips.
