While pumpkin pie might be the classic fall dessert, let’s take a moment to appreciate the irresistible goodness of pumpkin earthquake cake. Trust me, once you try it, there’s no going back!

What Makes Pumpkin Earthquake Cake So Special

Imagine biting into a slice of moist, velvety pumpkin and pumpkin spice flavored cake that melts in your mouth. But wait, there’s more! Hidden beneath the surface are pockets of gooey cream cheese filling, chocolate chips, and pecans that add that extra touch of decadence. The surprise element in this cake comes from the “earthquake” effect that occurs during baking. As the cake bakes, it magically develops crevices and cracks, revealing pockets of molten cream cheese goodness within. This whimsical design adds an element of excitement and intrigue to your dining experience.

Perfect for Fall Gatherings

Whether it’s a cozy family dinner or a festive autumn get-together, this cake never fails to impress. Its warm and comforting aroma fills the room as it bakes, instantly putting everyone in the fall spirit.

Now, I know what you might be thinking – such an incredible dessert must be complicated to make. But fear not! The beauty of pumpkin earthquake cake lies in its simplicity. With just a handful of ingredients and a little bit of mixing and baking, you’ll have a scrumptious dessert ready to share with your loved ones.

One of the best aspects is its versatility. While it shines brilliantly as a stand-alone dessert, it can also be paired with a variety of accompaniments. How about a dollop of freshly whipped cream on top, or perhaps a scoop of velvety vanilla ice cream? Or, if you’re feeling adventurous, a sprinkle of cinnamon and a drizzle of caramel sauce could turn this cake into an extraordinary masterpiece.

Pumpkin earthquake cake is a truly exceptional dessert that encapsulates the essence of autumn – warmth, coziness, and pure bliss. So go ahead, gather your ingredients, preheat your oven, and prepare to experience the delightful sensation of indulging in this heavenly creation. Happy baking, my friends!

  • 3 eggs
  • 1 cup canned pumpkin puree
  • 3/4 cup water
  • 1/2 cup oil
  • 1/3 cup granulated sugar
  • 2 teaspoons pumpkin pie spice

  • 1 8 oz package cream cheese softened
  • 1/2 cup butter , melted
  • 3 cups powdered sugar

  • 1/2 cup milk chocolate chips (or semi-sweet chocolate chips)

  • Preheat oven to 350 degrees and spray a 9×13 baking dish with cooking spray.
  • Sprinkle the coconut and pecans evenly over the bottom of the dish.
  • For the cake: In a large bowl, combine the cake mix, eggs, pumpkin, water, oil, sugar, and pumpkin pie spice. Mix until well combined and pour over the coconut and pecans.
  • For the filling: Place cream cheese in a medium bowl and microwave for about a minute or until it’s really soft. Add the melted butter and stir until combined. Add the powdered sugar and stir until smooth.
  • Place dollops of the filling all over the top of the cake batter and then using a knife, gently swirl it through.
  • Sprinkle with chocolate chips and bake for 30-40 minutes. Because of the filling the cake will not look completely done but will as it cools. Serve warm.
