Classic Creamy Macaroni Salad
Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 2 tablespoons sweet pickle relish
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- Mix In
- 1 cup diced celery
- ½ cup diced red onion
- ½ cup diced bell pepper
- 3 hard boiled eggs chopped
- 1 cup shredded carrots optional
Instructions
- Cook macaroni according to package directions until tender. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, mustard, relish, vinegar, sugar, salt, pepper, and onion powder.
- Stir in macaroni, celery, onion, bell pepper, eggs, and carrots if using.
- Cover and chill at least 1 hour before serving.
Notes
Add diced ham, bacon, or shredded chicken to make it heartier.
Sprinkle paprika on top before serving for that classic deli-style look.
If it thickens in the fridge, stir in a splash of milk before serving.
