There is always that one cookie.
The one that doesnโt sound impressive on paperโฆ but somehow disappears faster than anything else on the tray.
This is that cookieโdeveloped and tested right here in the This Old Baker kitchen.
Chocolate chips, peanut butter chips, and oats all in one dough might sound like someone couldnโt decide what they wanted to bake.
But once you take a bite, it just works.
Rich, soft, a little chewy, a little heartyโฆ and somehow better than you expected.
Why This Cookie Works (Even When It Shouldnโt)
At first glance, it feels like too much.
Chocolate.
Peanut butter.
Oats.
But instead of competing, everything balances out.
The chocolate brings sweetness.
The peanut butter adds depth.
The oats give it that soft, chewy texture that keeps it from feeling too rich.
Itโs the kind of cookie that feels like a cross between a classic chocolate chip and something a little more comforting and homemade.
The Pantry Mix Advantage
Normally, a cookie like this would mean pulling out half your kitchen.
Different ingredients, different measurements, extra steps.
But when you start with a pantry mix, all the hard work is already done.
The base is ready.
All youโre doing is building flavor on top of it.
Which means you can go from โI want cookiesโ to pulling a tray out of the oven in no time.
That Soft, Bakery-Style Texture
This isnโt a thin, crispy cookie.
This is the kind you break open while itโs still warm.
Soft in the center.
Thick enough to hold all those mix-ins.
Just a little golden around the edges.
The oats help give it structure without making it dry, which is what makes this one stand out from a typical chocolate chip cookie.
The Kind of Cookie That Doesnโt Last Long
This is not a โsave for laterโ kind of recipe.
Itโs the kind people grab while theyโre still cooling.
The kind where you think youโll just have oneโฆ and then suddenly youโre reaching for another.
And if youโre baking for a group?
You might want to make a double batch.
Perfect for Real Life Baking
This one fits right into everyday life.
It doesnโt need frosting.
It doesnโt need decorating.
It doesnโt need a special occasion.
Itโs just a really good cookie you can make when you want something homemade without overthinking it.
What Comes Next
Once youโve made this one, itโs easy to see how flexible that base mix really is.
Because this cookie?
Itโs just one version.
And there are plenty more where this came from such as Copycat Crumbl Pink Sugar Cookie.
