  • 1 cup smoked ham diced
  • 4 cups potatoes peeled and diced
  • 1 cup onion finely chopped
  • 1 cup celery chopped
  • 1 cup carrots diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can 15 ounces creamed corn
  • 1 can 15 ounces whole kernel corn, drained
  • 2 cups milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • Chopped fresh parsley crumbled bacon and green onion for garnish (optional)

Instructions
 

  • Prep the Ingredients: Dice the smoked ham, potatoes, onions, celery, and carrots.
  • Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the onions, celery, carrots, and garlic. Sauté until the vegetables are softened.
  • Add Ham and Potatoes: Stir in the diced smoked ham and potatoes. Cook for a few minutes, allowing the flavors to meld.
  • Make a Roux: Sprinkle the flour over the ham and vegetable mixture. Stir to coat and cook for 2-3 minutes to eliminate the raw flour taste.
