Instant Vanilla Pudding Mix
Ingredients
- 2 cups cornstarch
- 2 cups sugar
- 1 1/2 cups dry milk
- 3 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp nutmeg
Instructions
- Mix dry ingredients together, then stir in the vanilla extract. (I will pulse it in the food processor till powdered.)
- Store in an air tight container.
- Use 1/2 cup of mix in place of a large box (5 oz) of instant pudding in recipes with 3 cups of milk, or 1/4 cup of mix in place of a small box (3-4 oz) with 2 cups milk. Stir and let it sit for 5 min to thicken.

Would a dry non dairy milk work? Like soy.

From what I remember is that you use about 1/2 as much soy. Been along time since I’ve used soy.
