
Chicken and Dumplings (Old-Fashioned, Cozy Pot)

For the Chicken Base:
- 2 tablespoons butter
- 1 small onion diced
- 2 cloves garlic minced
- 1/4 cup all-purpose flour
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 cup milk or half & half for richer
- 1 teaspoon salt adjust to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon poultry seasoning optional
For the Dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons butter melted
- 1 cup milk
Instructions
- In a large pot or Dutch oven, melt butter over medium heat.
- Add diced onion and cook until softened, about 3–4 minutes.
- Stir in garlic and cook 30 seconds.
- Sprinkle in flour and stir to form a roux. Cook 1–2 minutes.
- Slowly whisk in chicken broth until smooth.
- Add shredded chicken, milk, salt, pepper, thyme, and poultry seasoning. Simmer gently.
- In a bowl, mix flour, baking powder, and salt.
- Stir in melted butter and milk until a soft dough forms.
- Drop spoonfuls of dough directly into the simmering pot.
- Cover and cook on low for 15–18 minutes. Do not lift the lid while they cook.
- Once dumplings are cooked through, gently stir and serve hot.
Notes
- Keep heat low when dumplings are cooking—no boiling.
- Lifting the lid early will make dumplings dense.
- Add frozen peas and carrots if you want a veggie version.
