Ingredients
  

  • 1 pound dry pinto beans soaked
  • 2 celery stalks diced
  • 3 large carrots diced
  • 1 small onion diced
  • 1 pound diced ham you can also use a leftover, meaty ham bone
  • 8 cups chicken broth
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 bay leaf
  • chopped fresh thyme for garnish

Instructions
 

  • Soak the beans overnight for 8-24 hours in plenty of water and then rinse and drain the beans.. Sort any unwanted debris from beans, then rinse and drain.
  • Place celery, carrots, onion, ham (or entire ham bone if using), chicken broth, garlic, paprika, and beans in a 6-quart slow cooker.
  • Cook on high 5-7 hours (or low for 7-8) or until beans are tender. (Crock pots all cook at different rates, so check the beans for doneness).
  • Once tender, remove the bay leaf (and the hambone if used. Chop any meat left on the bone and add it back to the pot.)
  • Cook for additional 30 minutes, then serve warm. Serve with cornbread.
