Ingredients

  • 1 lb lean ground beef
  • 1 1-oz package taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 10-oz can diced tomatoes and green chiles, undrained
  • 3 packages (3 oz each) Velveeta Cheese (use 2 jalapeño and 1 regular for extra spice)
  • 1 cup shredded cheddar cheese
  • 1 32-oz package frozen tater tots

Step-by-Step Instructions

1. Preheat the Oven

Preheat your oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray and set it aside.

2. Cook the Beef

In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess fat.

3. Add Flavor and Cheese

Stir in the taco seasoning and undrained can of diced tomatoes and green chiles. Add the Velveeta cheese, stirring until the cheese is fully melted and the mixture is smooth. Simmer for 5 minutes.

4. Assemble the Casserole

Spread the beef mixture evenly into the prepared baking dish. Arrange the frozen tater tots in a single layer over the top.

5. Bake

Bake for 30 to 40 minutes, or until the casserole is bubbly and the tater tots are golden brown and crispy.

6. Serve

Sprinkle the shredded cheddar cheese over the casserole during the last 5 minutes of baking for an extra cheesy finish. Let cool slightly before serving.

Make It Your Own

  • Switch the Protein: Swap ground beef for ground turkey or shredded chicken.
