Mexican Tater Tot Casserole
Ingredients
- 1 lb lean ground beef
- 1 1-oz package taco seasoning or 2 TB of our homemade taco seasoning
- 1 10-oz can diced tomatoes and green chiles, undrained
- 3 packages 3 oz Velveeta Cheese (used 2 jalapeno and a regular)
- 1 cup cheddar cheese shredded
- 1 32-oz package frozen tater tots
Instructions
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- Cook ground beef in a large skillet until no longer pink. Drain fat. Stir in taco seasoning, diced tomatoes and cheese packets. Simmer for 5 minutes.
- Spread mixture into prepared pan.
