Mexican Tater Tot Casserole
Mexican Tater Tot Casserole fuses traditional Southwestern flavors with the comforting crunch of tater tots, blanketed in a zesty mix of Rotel tomatoes, ground beef, and melted cheese. Often referred to as "Rotel Tater Tot Casserole" or "Hot Dish," it's a crowd-pleasing one-dish meal that brings a spicy kick to the dinner table.

- 1 lb lean ground beef
- 1 1-oz package taco seasoning or 2 TB of our homemade taco seasoning
- 1 10-oz can diced tomatoes and green chiles, undrained
- 3 packages 3 oz Velveeta Cheese (used 2 jalapeno and a regular)
- 1 cup cheddar cheese shredded
- 1 32-oz package frozen tater tots
Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
Cook ground beef in a large skillet until no longer pink. Drain fat. Stir in taco seasoning, diced tomatoes and cheese packets. Simmer for 5 minutes.
Spread mixture into prepared pan.
Bake for 30 to 40 minutes, until bubbly.
