  • Preheat your oven to 350°F. Line a 10×15 baking sheet with foil and spray with cooking spray.
  • Lay out the saltines in a single, cozy little layer.
  • In a saucepan, melt the butter and sugar-free brown sweetener over medium-high heat.
  • Bring to a boil, whisking often, and let it bubble for 2 minutes until smooth and caramel-like.
  • Pour the sugar-free caramel evenly over the crackers, spreading it to the edges.
  • Bake for 5 minutes — it’ll be bubbly and gorgeous.
  • Remove from the oven and immediately sprinkle with sugar-free chocolate chips.
  • Let them sit for a minute to melt, then spread the chocolate into a smooth layer.
  • Top with chopped nuts.
  • Let it cool completely (the fridge speeds things up), then break into pieces and try not to eat half the tray.

Notes

Allulose-based sweeteners give the smoothest caramel and the least graininess.
Crack sets best when fully cooled — pop it in the fridge or freezer for clean breaks.
Add ½ tsp vanilla to the caramel for bakery-level flavor.
