Crockpot Taco Tater Tot Hotdish

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 packet taco seasoning or your homemade 👀https://thisoldbaker.com/taco-seasoning-mix/
  • 1 can cream of mushroom or cream of chicken or homemade
  • 1 can Rotel undrained
  • 1 can corn frozen or canned (drained)
  • 1 1/2 cups shredded cheese
  • ½ bag frozen tater tots (use half of a 16 oz bag)
  • 1 can black beans drained

Instructions
 

  • Brown beef + onion, drain
  • Stir in taco seasoning, soup, Rotel, and corn
  • Pour into crockpot
  • Top with cheese
  • Add tater tots on top
  • ⏳ Cook:
  • Low: 4–5 hours
  • High: 2–3 hours
  • 👉 Last 20–30 min: crack the lid a bit if you want the tots less soggy
