This 4-ingredient beef and potato casserole is a simple, hearty meal made with ground beef, sliced potatoes, creamy soup, and cheese. Baked in a 9x13 dish, it’s an easy, budget-friendly dinner that feeds the whole family with minimal prep.
Preheat oven to 350°F. Lightly grease a 9x13 baking dish.
In a skillet, cook ground beef over medium heat until browned. Drain excess grease.
Layer half the sliced potatoes in the bottom of the dish.
Add half the cooked beef, then spread half the soup over the top.
Repeat layers: potatoes, beef, then remaining soup.
Cover tightly with foil and bake for 60 minutes.
Remove foil, sprinkle cheese evenly over the top, and bake uncovered for another 15–20 minutes, until potatoes are tender and cheese is melted.
