Southwest Turkey Sweet Potato Skillet
A hearty one-pan dinner loaded with seasoned ground turkey, tender sweet potatoes, black beans, corn, and plenty of bold Southwest flavor. Easy enough for weeknights, filling enough for leftovers, and perfect for meal prep.

Heat olive oil in a large skillet over medium heat.
Add the cubed sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they begin to soften.
Add the onion and bell pepper. Cook another 3–4 minutes.
Push the vegetables to one side and add the ground turkey. Cook until browned and fully cooked, breaking it apart as it cooks.
Stir in the garlic, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
Add the black beans, corn, and diced tomatoes with green chilies. Stir everything together and simmer for 5–7 minutes until heated through and the sweet potatoes are fork tender.
Sprinkle cheese over the top. Cover for 2–3 minutes until melted.
Finish with green onions and your favorite toppings before serving.
Spoon into tortillas for tacos or burritos
