Pulled Pork Cornbread Bowl

This is the kind of comfort food that makes people go suspiciously quiet at the dinner table. Sweet cornbread, smoky pulled pork, creamy mac and cheese, and barbecue sauce all piled into one cozy bowl.

Ingredients
  

Cornbread Layer

  • Prepared cornbread homemade or boxed mix
  • Cut into chunks or crumbled

Filling

  • 3 –4 cups pulled pork
  • 2 cups prepared mac and cheese
  • ½ cup BBQ sauce plus more for drizzling
  • 1 cup shredded cheddar cheese optional

Toppings

  • Green onions sliced
  • Crispy fried onions optional
  • Jalapeños optional
  • Extra BBQ sauce

Instructions
 

  • Prepare the cornbread and let it cool slightly.
  • Warm the pulled pork with the BBQ sauce in a skillet or saucepan until heated through.
  • Prepare the mac and cheese.
  • To assemble, add chunks of cornbread to the bottom of each bowl. Top with creamy mac and cheese, then pile on the BBQ pulled pork.
  • Drizzle with extra barbecue sauce and sprinkle with green onions.
  • Serve warm.

Easy Variations
Add baked beans for a full BBQ bowl
Use pepper jack cheese for heat
Swap mac and cheese for smoked gouda shells
Add coleslaw on top for crunch
Use hot honey BBQ sauce for sweet heat
