Peach Simple Syrup
Golden, fragrant peach simple syrup made from real fruit — for iced tea, lemonade, cocktails, coffee, and everything that benefits from a spoonful of summer.

Add the water, sugar, and diced peaches to a medium saucepan.
Bring to a gentle simmer over medium heat, stirring until the sugar has completely dissolved.
Reduce the heat to low and simmer for 15–20 minutes, stirring occasionally, until the peaches are very soft and have released their juices.
Remove from the heat and let the syrup steep for 15 minutes for a stronger peach flavor.
Strain through a fine-mesh sieve, gently pressing on the peaches to extract as much syrup as possible. Discard the solids or save them for yogurt or oatmeal.
Stir in the vanilla and lemon juice, if using.
Cool completely, then pour into a clean pint mason jar. Refrigerate.
Storage
Refrigerate for up to 2 weeks.
Fresh ripe peaches produce the most fragrant syrup; frozen works year-round. Peel and pit fresh peaches before using. Add lemon juice to prevent browning and brighten flavor. Add vanilla off heat after straining. Strain for clear drinks syrup; blend for thicker food-use version. Keeps 2 weeks refrigerated; freeze in ice cube trays up to 3 months.
For longer storage, freeze in ice cube trays or freezer-safe containers for up to 3 months.
