Make the Dressing:
In each of two 32-ounce mason jars, add the following to the bottom:
1 tablespoon sour cream
1 tablespoon olive oil
1 tablespoon plain yogurt
3 tablespoons lime juice
1 teaspoon honey
½ teaspoon taco seasoning
¼ teaspoon smoked paprika
Stir to mix the dressing in the bottom of each jar.
Layer the Ingredients:
Add the following to each jar in this order:
½ cup black beans
½ cup corn
⅓ cup cherry tomatoes
1 tablespoon chopped onion
1 tablespoon sliced jalapeño
½ of an avocado, diced
½ cup cooked chicken breast, chopped
1 tablespoon fresh cilantro
½ cup chopped Romaine lettuce
Store and Serve:
Seal the jars and keep them in the fridge for up to 3–4 days. When you're ready to eat, pour the contents into a bowl, toss everything together, and enjoy!
