  • Finely chop the onion, slice the jalapeño, and cut the cherry tomatoes in half.

Make the Dressing:

  • In each of two 32-ounce mason jars, add the following to the bottom:
  • 1 tablespoon sour cream
  • 1 tablespoon olive oil
  • 1 tablespoon plain yogurt
  • 3 tablespoons lime juice
  • 1 teaspoon honey
  • ½ teaspoon taco seasoning
  • ¼ teaspoon smoked paprika
  • Stir to mix the dressing in the bottom of each jar.

Layer the Ingredients:

  • Add the following to each jar in this order:
  • ½ cup black beans
  • ½ cup corn
  • ⅓ cup cherry tomatoes
  • 1 tablespoon chopped onion
  • 1 tablespoon sliced jalapeño
  • ½ of an avocado, diced
  • ½ cup cooked chicken breast, chopped
  • 1 tablespoon fresh cilantro
  • ½ cup chopped Romaine lettuce

Store and Serve:

  • Seal the jars and keep them in the fridge for up to 3–4 days. When you're ready to eat, pour the contents into a bowl, toss everything together, and enjoy!
