Loaded Baked Potato Chicken Casserole

A hearty, family-friendly casserole loaded with tender potatoes, juicy chicken, crispy bacon, melty cheese, and plenty of ranch flavor.

Ingredients
 
 

  • 2 pounds russet potatoes diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups cooked chicken shredded or diced
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons ranch seasoning
  • 2 cups shredded cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 4 green onions sliced

Instructions
 

  • Preheat oven to 400°F.
  • Grease a 9x13-inch baking dish.
  • Place diced potatoes in a large bowl. Toss with olive oil, salt, and pepper.
  • Spread potatoes into the prepared baking dish.
  • Bake for 30 minutes, stirring halfway through, until potatoes begin to soften.
  • While potatoes bake, combine sour cream, mayonnaise, ranch seasoning, cooked chicken, 1 cup cheddar cheese, half the bacon, and half the green onions in a large bowl.
  • Remove potatoes from the oven and reduce temperature to 375°F.
  • Add the chicken mixture to the potatoes and stir gently to combine.
  • Spread evenly in the baking dish.
  • Top with remaining cheese and bacon.
  • Bake for 20 minutes or until hot and bubbly.
  • Remove from oven and let rest for 5 minutes.
  • Sprinkle with remaining green onions before serving.

Notes

Rotisserie chicken works great in this recipe.
For extra flavor, use sharp cheddar cheese.
Add a little hot sauce or diced jalapeños for a spicy version.
Leftovers reheat beautifully for lunch the next day.
Optional Ranch Sauce Drizzle
Whisk together:
½ cup sour cream
2 tablespoons milk
1 teaspoon ranch seasoning
Drizzle over individual servings just before serving.
Freezer Instructions
Assemble casserole without the final cheese topping. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator, add cheese, and bake as directed.
