- 1 pound potato gnocchi
- 1 pound Italian sausage mild or hot, casing removed
- 2 cups marinara sauce
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 cloves garlic minced
- 1 tablespoon olive oil
- ½ teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh basil or parsley for garnish optional
Cook the gnocchi
Bring a pot of salted water to a boil and cook the gnocchi according to package directions. Drain and set aside.
Brown the sausage
Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and fully cooked.
Add garlic and sauce
Stir in the garlic and cook for about 30 seconds until fragrant. Pour in the marinara sauce and sprinkle in the Italian seasoning, stirring well.
Add the spinach
Stir the fresh spinach into the sauce and cook for about 1 minute until wilted.
Combine the gnocchi
Add the cooked gnocchi to the skillet and gently toss so everything is coated in the sauce.
Add the cheese
Sprinkle mozzarella and Parmesan evenly over the top.
Melt the cheese
Cover the skillet and cook for 3–4 minutes until the cheese is melted and bubbly. For a golden top, place the skillet under the broiler for 1–2 minutes.
Serve
Garnish with fresh basil or parsley if desired and serve warm.
