Homemade Gnocchi Mix
A homemade gnocchi mix can be made using instant potato flakes, flour, and seasonings to create a shelf-stable pantry shortcut. Just add hot water and an egg to form a soft dough, then roll, cut, and cook the gnocchi until they float.

Instructions
To Make the Gnocchi
Add to bowl:
1½ cups dry mix
½ cup hot water
1 tablespoon olive oil
1 egg (optional but helps structure)
Mix into a soft dough.
Roll into ropes, cut into small pieces, and cook in boiling salted water.
When the gnocchi float to the top, they’re done (about 2–3 minutes).
Notes
Store in an airtight jar up 6 month to one year.
