Ingredients
  

  • 1 refrigerated pie crust or homemade.
  • 5 large eggs
  • 1 cup milk or half-and-half
  • cups shredded cheddar cheese or swiss cheese
  • 1 cup diced ham
  • 1 cup fresh spinach roughly chopped
  • ¼ cup diced onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F.
  • Fit pie crust into a 9-inch pie plate.
  • Sprinkle ham, spinach, onion, and cheese evenly into the crust.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Pour egg mixture over the fillings.
  • Bake 35–45 minutes until the center is set and the top is lightly golden.
  • Let sit 5–10 minutes before slicing.
