Notes

Honey is a direct substitute for agave at the same ratio. Add mint right before serving — it darkens quickly after cutting. For make-ahead: prep fruit the night before without agave or mint; add both the morning of. The agave draws out fruit juices over time — a slightly juicier bowl the next day is normal and still delicious. Avoid bananas, apples, or pears — they soften and brown too quickly. Serve cold.
