Easter M&M Bunny Cookies are soft, chewy cookies loaded with white chocolate chips and pastel M&Ms. Each cookie is topped with halved M&Ms to create adorable bunny ears, making them the perfect festive treat for springtime and Easter celebrations.
Preheat your oven to 350°F and line baking sheets with parchment paper.
Melt the butter and let it cool for about 5 minutes.
In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
In a separate large bowl, mix the cooled melted butter with the sugars until well combined. Stir in the egg and vanilla extract.
Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in the white chocolate chips and pastel M&Ms.
Scoop the dough using a medium cookie scoop and place onto the prepared baking sheets.
Bake for 10–12 minutes, or until the edges are lightly golden.
While the cookies are baking, carefully slice a handful of M&Ms in half with a sharp knife—these will be your bunny ears.
When the cookies come out of the oven, gently press the M&M halves into the warm cookies next to any whole M&Ms that are already visible. If there aren’t many showing, press a few whole M&Ms into the tops first, then add the halves for ears.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container for 3-5 days. Cookies can also be frozen.
