Dried Apple Slices (Schnitz)

Dried apple slices, often called schnitz, are simply peeled apples that have been thinly sliced and slowly dried until chewy and shelf-stable. They’re perfect for snacking, baking into pies or stack cakes, or simmering into old-fashioned fried apples just like grandma used to make. 🍎

Ingredients
  

  • 6 cups apples peeled, cored, and thinly sliced (Granny Smith or Golden Delicious work well)
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon optional

Prep the Apples

  • Place your peeled and sliced apples in a large bowl and toss them with the lemon juice. This keeps them from turning brown while they dry. If you’re using cinnamon, sprinkle it over the apples and toss again until everything is lightly coated.

Dehydrate

  • Lay the apple slices in a single layer on your dehydrator trays. Don’t overlap them — they need space to dry properly. Set your dehydrator to 135°F (57°C) and let them dry for 6–12 hours, turning occasionally, until they’re leathery and pliable but not brittle.
  • No dehydrator? No problem. Arrange the slices on parchment-lined baking sheets and set your oven to its lowest temperature (around 140°F/60°C). Prop the door open slightly to let moisture escape and dry for 8–10 hours, turning occasionally, until done.

Cool and Store

  • Let the apples cool completely before storing. Transfer to airtight jars or containers and keep in a cool, dark spot. Properly dried apples will store beautifully for up to one year.
