Instructions
 

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream the butter and sugars in a large mixing bowl until light and fluffy—about 2 minutes.
  • Beat in eggs and vanilla until well combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually mix the dry ingredients into the wet until just combined.
  • Stir in oats, chocolate chips, coconut, and nuts (if using). The dough will be thick and chunky—just how we want it!
  • Scoop dough by rounded tablespoons (or a cookie scoop) onto prepared baking sheets, spacing about 2 inches apart.
  • Bake for 10–12 minutes, until the edges are golden and the centers are just set. I like to add some finishing sugar for extra sparkle and crunch.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack.
