Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream the butter and sugars in a large mixing bowl until light and fluffy—about 2 minutes.
Beat in eggs and vanilla until well combined.
In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
Gradually mix the dry ingredients into the wet until just combined.
Stir in oats, chocolate chips, coconut, and nuts (if using). The dough will be thick and chunky—just how we want it!
Scoop dough by rounded tablespoons (or a cookie scoop) onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10–12 minutes, until the edges are golden and the centers are just set. I like to add some finishing sugar for extra sparkle and crunch.
Let cool on the pan for 5 minutes, then transfer to a wire rack.
