  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs and vanilla. Mix until combined.
  • Stir in grated carrots and well-drained pineapple.
  • Add dry ingredients and mix just until combined. Fold in nuts if using.
  • Scoop dough into 2-tablespoon portions and place 2 inches apart on baking sheet.
  • Bake for 12–14 minutes, until edges are set and centers look soft.
  • Let cool completely.

Make the Frosting:

  • Beat cream cheese and butter until smooth.
  • Add powdered sugar, vanilla, and salt.
  • Beat until fluffy and spreadable.

Assemble:

  • Spread frosting on the flat side of one cookie.
  • Top with another cookie to make a sandwich.
  • Repeat.

Notes

Drain pineapple well or cookies will spread too much
Don’t overbake—these should stay soft
Chill cookies before assembling if your kitchen is warm
Store in fridge, but serve slightly softened for best texturev
