Ingredients
 
 

  • 12 eggs
  • 8 oz shredded cheese
  • 3 small peppers one each of red, yellow, and green
  • 1 lb sausage
  • 1/2 lb hamburger
  • 1 onion chopped
  • 1 small bag of tator tots
  • butter

Instructions
 

  • Preheat oven to 350. Butter 9 by 13 pan on bottom and sides.
  • Place hamburger and sausage in a large skillet and cook until slightly pink. Add chopped onions and peppers and cook until peppers are soft. Drain.
  • In a separate bowl, add eggs and beat until all eggs are blended. Add 1/3 of the cheese and stir in.
  • Lay tator tots in a single layer in the 9 by 13 pan.
  • Top tator tots with sausage/hamburger/veggies mixture.
  • Pour eggs over sausage mix.
  • Bake for 40-45 minutes. At the last 10 minutes, sprinkle remaining cheese on top and finishing baking.
