Ingredients
- 12 cups all-purpose flour
- 4 1/2 cups sugar
- 4 1/2 tablespoons baking powder
- 3 teaspoons salt
- 3 teaspoons ground cinnamon
- 3 teaspoons ground nutmeg
Instructions
- In a large bowl mix together dry ingredients. Store in an airtight container up to 6 months.
- To prepare: Preheat oven to 400°. To prepare combine 2 cups mix, 1/2 cup shortening OR oil of your choice, 3/4 cup milk, 2 eggs, 1 tsp vanilla a and 1 cup mix-ins. Fill paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 18-21 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
- For Blueberry Muffins: Fold 1 cup fresh or frozen blueberries into prepared batter.
- For Banana Muffins: Fold 1 cup mashed ripe bananas to egg mixture.
