Cake:

  • 1 3/4 cups all-purpose flour 228 grams
  • 1 3/4 cups granulated sugar 350 grams
  • 3/4 cup unsweetened cocoa powder 75 grams
  • 1 teaspoon baking powder 4 grams
  • 2 teaspoons baking soda 10 grams
  • 2 teaspoons cinnamon 6 grams
  • ¼ teaspoon cayenne pepper optional, 1 gram
  • 1 teaspoon salt 8 grams
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla
  • 1 cup freshly brewed strong hot coffee

Frosting:

  • 1 cup salted butter room temperature
  • 1 ½ teaspoons vanilla extract
  • 4 cups powdered sugar
  • 5-6 tablespoons heavy cream
  • 1 tablespoon cinnamon

Topping:

  • 1 cup mini chocolate chips

Instructions
 

  • Preheat the oven to 350ºF. Spray a 9×13 baking pan with cooking spray.
  • In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, cinnamon, cayenne pepper (if using), and salt.
  • In a stand mixer, blend buttermilk, oil, eggs, and vanilla. Gradually mix in the dry ingredients on low speed. Add the coffee and mix until smooth; the batter will be thin.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean.
  • Let the cake cool on a cooling rack.

Make the frosting:

  • In a stand mixer, whip the butter for 2 minutes until fluffy and lightened in color.
  • Mix in vanilla and cinnamon. Gradually add powdered sugar, alternating with heavy cream, ending with powdered sugar. Whip on high for 2 minutes, adjusting with more cream if too thick.
  • Spread the frosting over the cooled cake and sprinkle with mini chocolate chips.
